Quiche and pie crusts?

I'm making a quiche for a party we're having in Spanish class tomorrow. Idk what to do about the pie crust though; I don't eat flour and I don't have any of the ingredients for a low-carb crust. I don't want to just make it with flour and not eat it because all the other kids have signed up to bring muffins and cereal and doughnuts and this will be the only thing I can eat, unless somebody's signed up for fruit recently. So can I just put oil on the pan and skip the pie crust? The recipe calls for a crust but I know not all quiche's do.
